Ingredients:
1 Packet of Hakka Noodles (roughly 200-300 gm)
1/2 cup chopped French Beans
1/2 cup chopped Carrots
1 small Onion sliced
1 stalk of Celery cut into 1-inch long pieces (optional)
2 tbsp chopped garlic
1 tbsp chopped ginger
1 tbsp soy sauce
1 tbsp vinegar
2 tsp chopped green chilies
1 tsp white pepper powder
1 tsp Ajinomoto (optional)
Salt
Sugar
Chopped green onion for garnishing
For Non-vegetarians: Add shredded pieces of boiled chicken and boiled eggs
Method:
- Put noodles in boiling water and cook till they become soft. This will take around 15 min. Drain off the water and hold drained noodles under running cold water.
- In a wok, heat oil. Add chopped garlic, ginger, onions, chilies and white pepper powder. Saute for couple of minutes.
- Add vinegar followed by chopped vegetables ( and boiled chicken pieces). Cook the vegetables for 5 min.
- Add soy sauce, salt and sugar (and ajinomoto). Add very little salt as soy sauce itself is salty.
- Add the noodles and mix well.
- Garnish with chopped spring onion (and pieces of hard boiled eggs)
